Well since its chilly out I decided to fire up a quick pot of chili. I start with Carol Shelby's mix and usually use some 3/8" diced beef but after looking what King Snoopy's had tonight I went with a pound of ground beef and a pound of ground pork. I'm going to add a can of diced green chilis and a can of corn (it adds a nice sweet pop to it). No beans. I 'learned' what I like from watching all those Chili Cookoffs on tv.

mexican chile verde

made a green chile base from cerrano's , yellow chiles, tomatillo and jalapenos.
cubed about 7lb of boneless pork shoulder, slow cooked it til it was tender, in spices and olive oil.
once it was tender, added the green chile puree, chopped onions, cilantro, raw jalapenos, and simmered for about an hour.

on the side, a pot of pinto beans to go with it.

having a big helping while watching the SD / New England game

life is good!
